Yes, but.....

You will have a possible issue where the 5x7 lower negative stage is located.  
The aperture from a 5x7 MAY vignette here.

this is based on not using a condenser in the light path.

You do NOT want the light source to basically touch the negative.  You will get 
hot spots.  You want a diffused light source......2
choices..... Get the light bulbs ( source ) far from the negative, or put in 
diffusing material.  Or multiple layers of diffusing
material.  Opal glass, frosted glass, diffused plastic sheeting, Styrofoam 
layer, etc.  As a further help, cover with mirrors the
inside of  your light source box.  That will also assist in the diffusing of 
the light ( costs almost nothing and gets you a big
gain in this area.  The idea is to have a NON-point light source.)  All but the 
mirrors will attenuate your light strength, but make
the light you do get to be much more even over the 8x10 area.
