So is it good practice to put rolls (35mm or 120) or packets of sheets
into a plastic freezer bag, extract the air and seal the bag before
freezing?

With sheet film you may have mxed results... depending on the
care the
manufacturer put on the package.
..and if it's Polaroid Type 55, make sure it's in a totally sealed
bag. Otherwise, it will bind itself and when you go to pull out the
envelope to expose the film.. it won't (talking recent experience..
wated 10 sheets!)
