Lucky! you live right next door to the candy store. Just reading your description, I'm drooling.

One thing that has to be taken into account, is the population size of Canada. Our entire population equals the population of Southern California. So if only 5% of our population still does analog photography, wet darkrooms and all, then that 5% is spread pretty thin, in a country that is the second largest in the world, in terms of square footage. Whereas 5% in So Cal makes for a large number in a small area, all things considered.

Anyway, consider yourself lucky.

And start stocking up the freezer  ;)
