I read about the accessibility options after startup but didn't see how to 
activate them during installation?  Did I miss something somewhere?

You really need to go read the ubunto page.  No you need no help  installing
it. It took me twenty minutes to install it and it runs up talking as soon
as your done.  It talks the entire install and has everything you need if
you install Ubuntu 8.04 which is the current release.  As for the beta I
wouldn't trust it if you're a first time user.
