If the word "instantiate" means "create an instance of," then I agree
that, technically, the phrase "instantiate an object" would not be
correct, since one creates an instance of a class rather than an object.
It is common, however, to speak of "instantiating an object," including
within technical books and official documentation. This is because the
English language (or any natural language) is often used in a less precise
way to communicate in a manner that is efficient in the context without
loss of meaning.
