I am not sure which version of JAWS you are using, but I use JAWS 8 and have a 
lot of access to SQL Server 2005.  You can get at the server in a bunch of 
ways, some of which are:

Through visual studio 2005.  You will want to have the JAWS script for VS 2005 
installed.  Someone here will definitely give you the link to the brab bag site 
where you can get them.

Another way is to use SQL Server Managerment Studio.  There is a free express 
version from MS.  You'll be able to build databases, tables, indexes, write 
stored procedures, write and execute scripts, etc.

Of course there will be some work arounds you'll need to do because some of the 
interfaces are a bit quirkly with a screen reader.  But all in all, very doable.
