Those that autoupdate notifies about are important ones.  However they 
should not be installed right away unless you know it will fix something 
that is causing you problems.

Not all updates are right for everyone.  The new IE 7 is a classic example. 
I'm sure you have read some of the reports of problems with it.

Always wait a few a few days before installing anything.  Watch for and read 
any reports of problems and install only after you are reasonably sure it 
will not create more problems than it will cure.

I would suggest subscribing to one or more of the various computer 
newsletters I have recommended here before, such as Windows Secrets (now 
merged with Langalist) and TechsupportAlert.  And of vourse, read and heed 
what you see here at PCTT.
