I buy the cheap chuck steak. rinse it off to remove the juices that may be on it. put it in a large enough ziploc page add either or all; Wine/orange juice/line juice/apple juice/ Demarara sugar, mustard, fine diced garlic, and pepper. whatever other spices ingredients that you like. make a thick mixture of it Zip up the bag and massage it. every hour for 4 hrs flip it over and massage it. I normally start it the day before and let it marinate over night.
