As far as I know, IE8 should show up as a separate install in your
Add/Remove applet, which means it can be removed. The trick here is that
most critical updates will actuall back up the files they're replacing,
which is what allows them to be uninstalled and the older versions replaced.
Not all updates follow this convenience, however. So you'll have to check
the Add/Remove area to see if it's listed. You will probably have to make
sure there's a check in the box that says something like "Show updates" in
order to see it if it's there.
On a related note, I won't promise that uninstalling IE8 is going to heal
the rest of your system. ;)
