As long as you have the following setting, Thunderbird adds the > signs 
automatically:
tools / account settings / composition / automatically quote

(Since Thunderbird is standards compliant, it doesn't give users the 
ill-advised choices such as : or | offered by OE, for example.)

In fact, Thunderbird uses something more fancy called format=flowed, 
which suppresses the display of > signs, i.e. they're still there, only 
hidden. This makes long discussions with several levels of quotes look 
very clean and easy to follow using cool colored bars at the side 
instead of the >> and >>> and >>>> mess traditionally used to show 
different levels of quotes.

(Also, although i first thought The Bat's use of JD> to show not only 
what was being quoted but also by whom (e.g. John Doe) was good, but it 
looks pretty messy, makes it harder to quickly skip quoted passages, and 
doesn't seem to be standards compliant or know how to deal with several 
quote layers.)

Format=flowed also does cool things like preventing long URLs from being 
broken as in OE.

In case someone needs help on how to turn on standards-compliant quoting 
in OE:

tools, options, send, choose plain text, plain text settings, MIME, 
encode text using None, indent the original with >
