Yahoo is easy: click on Logon->Preferences->General, and uncheck
"Automatically Start Yahoo Messenger". Most other programs,
espefcially in the system tray have such an option somewhere also

The other way is to simply uninstall them.  If you don't want them,
then this is what you should do.
