As an alternative to Cy's suggestion, this icon is a simple text file.
To re-create it, right-click on your desktop and select New->Text
document. Once the file is created, open it and paste this into it:

[Shell]
Command=2
IconFile=explorer.exe,3
[Taskbar]
Command=ToggleDesktop 

Save, and then rename the file to "Show Desktop.scf".  You can now
move it to the Quick Launch bar.

There is a keystroke which is almost (not quite) the same; hold down
the Windows key and tap D.  I say "not quite" because sometimes one
will fail to minimize certain windows while the other will.

The gremlin in question is probably someone who knows what the Delete
key is; did you check in the recycle bin?
