I think the main problem or at least another one is that you should have
SP3 for security and other reasons, especially before installing IE 8. I
think you can uninstall IE 8 and get back IE 7 by simply going to the
Control Panel. See http://support.microsoft.com/kb/957700

I wouldn't be surprised if a SP removes all system restore points. A SP
is such a major change that it probably prevents the system restore
function and instead requires an uninstallation of the SP.
