[pchelpers] Canon Printer / ink question

I have a Canon MP500 printer.
It uses 2 black inks, and 3 color inks.
If I am printing something like a stack of invitations, over 3000....
is it wise to change the setting to have it not use the color inks somehow?

In Print settings, I can click on 'print in grayscale'.  Would that not 
use the color inks?
<And would it still give me a good clear black font?>

Just wondering as I'm using ink fast.  :)
