Here is the basic idea, based on one I was involved with back in my college
days.

This is a simplistic version of a PBEM game requiring minimal input once
wrestlers are chosen.  Each wrestler you manage will have a number of moves
selected from a big list of moves that belong to his repetoire.  Some moves are
normal, some maybe be marked as possibly illegal, and each wrestler will have
one his selected moves makred as a 'Finisher'.

To determine who wins a match, two wrestlers face off.  A random value will be
assigned to every move in the big list of moves (these values change each week).
 Every move your wrestler has, gets that value of the moves.  If it is a
finisher move, it is worth double.  The points are tallied up for each and a
winner determined.  Here is where an illegal move can mess you up, if the point
difference is within 10 points (a guess for now), the match is a draw.  If one
of the wrestlers has an illegal move in his list, then the match is a DQ and
other guy wins.  If both wrestlers have an illegal move, the both are DQ'd.

I have a list of what seems like almost 100 moves names, so there is room to
play with numbers.

I will pick one or two of the matches and write up a description of it for the
amusement of all based on the wrestler personality you guys write up for the
wrestlers you manage.

Again, this is a simplistic way of doing it, but good enough for experimenting.
