You can use LSNRCTL utility for accomplishing this.

================
$ (command prompt)> LSNRCTL
LSNRCTL > set current_listener <listener_name>
LSNRCTL > set log_file <new logfile name with the fully qualified path>
LSNRCTL > exit
================
Note :  The listener log will get reset when you bounce the listener.
