If you ask me, and I am not statistics guru, in either case, one is enough.   
Wasting any datafile is kind of mistake ...

Its kind of like (the opposite?) saying you can't win the lotto if you don't 
play, but buying two tickets is not doubling your odds, its wasting your money.

I do have to wonder however, especially if you do not use dictionary managed 
tablespaces, what is causing the system tablespace to grow (beyond 32G if your 
on 8K blocksize)?

How do you calculate that? And as a follow up are all your tablespaces bigfile?

It is acceptable to have more than datafile for SYSTEM.  Technically, this adds 
one more point of failure : "there's a higher probability of an administrator 
mistakenly removing any 1 of 2 files than 1 of 1 file".
