And some are only 80 dB.
And when you run some of them without a speaker load they may or may not have 
low distortion.

Not compared to the actual voltage output. Modern power amplifiers are
exceedingly good ... some are in the 120 dB S/N range! One just puts a
resistor divider or a transformer across the output. When doing this
sort of stuff you don't have speakers connected.
