Yes, that is a fundamental issue here. Doesn't help much if your source material doesn't include all these wonderful color hues.

Another problem I think would be that in order to display a large fraction of visible colors from just one or two gratings per pixel, the diffraction gratings would have to be fed a continuously variable set of voltages. So in the ultimate, it looks like an analog display again. If you instead limit the allowable voltages with a simplified scheme, you're back to requiring multiple gratings for each pixel just to generate the necessary colors, much like RGB.

Cliff's post about the oil film approach is interesting. Same coincept, possibly more difficult to miniaturize.
