I am not sure you might like to look around portableapps.com . However thunderbird does not need any kind of extra steps to be ran portably other than passing custom parameters to its executable. I am running thunderbird 3 on a pen drive. I have got my profile directory copied into the thunderbird directory and I am starting thunderbird like this: 
thunderbird.exe -no-remote -profile .\profile
