The Help menu instructions you quote are the very ones I cited in my original 
question, Paul. And as I said, they don't provide the answer.

Although the Help menu says to "Select the fax modem in the Printers list", no 
such fax modem option appeared in the Printers list on my screen. 

Scott explained how to add it. Perhaps I ought to have been clever enough to 
guess it for myself, but it seems to me that Apple ought also to have foreseen 
the need for the explanation in their Help file. I doubt I'm the only person 
who has ever encountered the problem.
