Unless your machine maxes out at 256, or you already have 256 in it don't go
for anything less than 320 MB, at the very least. 512 MB is a much better
choice, and, if you can afford it, more is even better (though, 512 MB is
liveable, especially if you have a faster machine).
The faster your HD (& CPU), the less RAM you need (though, *never* go below
256). OS X is one of those OSes that gets faster with more RAM and a fast HD
and benefits less from a fast CPU (though, dual processors help) compared to
OS 9.
I once played around with a G4/700 iMac with 128 MB of RAM and my G3/450
with its 576 MB was a lot more responsive with a lot of apps open and doing
stuff.
