 Theresa you can have mail colour code message by creating rules.  The colour 
could be applied from certain senders, recipients, subject line, even content 
of the message.  i.e. you could have a rule that any message that contains 
muglo in the subject line is coloured red, I have a rule for muglo in that 
incoming messages are put in a Mailbox named muglo.

I don't know if your needs would be more complex
