Safari will open with whatever you tell it to open with
Safari: Preferences: General: (customize to your hearts content!)

(see above) Which it seems you have discovered.
If you need more customization there are a number of Safari shareware
programs that will let you change some of the default settings. First
thing I changed was the purple (I think) visited links to red - easier
to see. I used Safari Enhancer.
