When the iPod is connected to the mac the screen will have a check box next to
only sync checked items, so if you uncheck them they will no longer be synced
but the problem is they nolonger will be available when you want them either.
I think make a playlist with everything but the language lessons and then play
that randomly and it should solve your problem. The easiest way to make this
playlist would be drag everything in iTunes into it and then just delete the
lessons from the playlist, make sure you don't delete them from iTunes but just
that list.
