Scanning an 8.5 by 11 sheet with a resolution suitable for printing  
(*300 DPI) should yield a file CMYK file of about 30 megabytes.  
Convert that file to a greyscale, it comes down to about 8 megabytes.

Do you need a 300 DPI scan? Try 150 even 72 dpi for suitable screen  
display.
