1. I don't know of a program that can transcribe to notation using acoustic
interpretation though there may well be one out there. But the simplest thing
you could do would be to add a MIDI interface/controller to the piano. There
are several choices, the link below is one example. Can't tell you much about
it other than it won't be cheap but it will "record" the notes that are played
on the acoustic piano to MIDI notes on a computer. Garageband on a Mac or iPad
would work just fine for this. Maybe consult with your local piano store for
more detailed advice on other MIDI controllers for acoustic piano.

3. As for writing notation on a computer, Avid's Sibellius is the gold
standard. Again, not cheap but it can do anything you would want to do with
music notation on a computer.

Musical ignoramous that I am, I imagine it would have to do it with one line
of single notes at a time, treble and bass lines separately, but maybe
technology has advanced beyond that.
Basically, she wants to be able to produce sheet music with only her piano
her iPad or iPhone and a printer.
