Bob suggested one solution already (hook VCR up to a digital
camcorder... you can get them for $400, new*). Another option is to
use an analogue to digital (& sometimes also digital to analogue)
converter. They come in between $200-400 for decent ones.

*Or you could borrow one ;-)

As for editing out bits and bobs, you can use iDVD or iMovie to do so.
