You have to make that selection of songs in iTunes .... or photo's
in iPhoto. To clarify; creating a folder or directory, or smart folder
selection of songs or pictures, by rating, topic, interest, or some
theme to sort the photos. In iTunes you can see, when your ipod is
connected, which of such directories you would like to download to the
ipod.
