Here's an exerpt from what Wired.com has to say:

Antispam experts agreed that this isn't a brand-new technique, but said=20=

the addition of potentially filter-foiling gibberish is rapidly=20
becoming a common component of spam.
... The addition of seemingly nonsensical words is aimed at confusing=20=

the antispam filters that incorporate Bayesian analysis techniques,=20
such as SpamBayes and SpamAssassin. These filters examine incoming=20
e-mail messages and calculate the probability of it being spam based on=20=

each message's contents. .

But unlike simple content filters that simply troll text looking for=20
specific words like Nigeria, money and opt, Bayesian spam filters=20
evolve according to each user's needs, analyzing all mail to determine=20=

what words and phrases are apt to appear in a user's legitimate e-mail=20=

and which are not. This process is called training, and results in a=20
highly personalized and efficient filtering system.

By throwing a hundred or so random words rarely used in sales spiels=20
into each e-mail missive, spammers hope to thwart Bayesian filters by=20
making the spam appear to be personal correspondence. Incorporating=20
words that might be used in legitimate e-mails is also intended to=20
poison the checklist the filter uses, forcing it to mark, for example,=20=

e-mails with somewhat common words like Amazon and fish as spam=20
indicators.

Thanks, Paul. Having to look this up cleared up that mystery.
