another thought... you can always install the OS's via appletalk from 
another mac... I had a Quadra700 I was asked to upgrade to OS 8.1, 
but when I got to it with my external cdr drive, the SCSI port did 
not work... so I ended up using another mac to install the OS using 
appletalk. You don;t necessarily need 2 monitors either... bc 
appletalk/filesharing should start up automatically on system boot, 
you can use only one monitor if you only have one. (but you do need a 
second cpu, obviously).
Be warned tho, this method is extremely slow! (although OS 7.1 was 
small, so that helps).
