Well, you could reset your system clock to the date you want, then open the
file and highlight the cell with the date in it and copy it, then Paste
Special > Values so it no longer has the formula in it, but instead has the
actual date (or just type the date in, instead of the formula)

Or, you can turn off automatic updating by going to Tools>Options and
clicking on the Calculation tab and choosing "Manual" at the top, instead of
automatic...but this means, if you update any of the info in the
spreadsheet, you will have to hit the F9 key to see any formulas update, and
the date would then update too.

Or, you could leave it all as it is and just manually type the date you want
in a different cell, then you would see both dates...the one generated by
the formula and the one you typed in manually, and all other formulas in the
spread sheet would still update automatically.

Not sure which of these would suit your needs, but these are just some
suggestions.

is there a way to open an excel workbook that automatically refreshes
without it refreshing automatically? 
I have a file I created 2 years ago that's date dependent. every time I
open it, I get it w/current dates but I'd really like to see it with the
original dates.

I get around it by changing my system date but thought there might be an
alternative.
