The way I generally do this is to make a hyperlink to a more useful
directory, then copy and paste this as the basis of my new link, simply
changing the properties. It makes browsing for the target much quicker.
Isn't it mad that this one dialogue doesn't have the places bar?

If I choose to insert a hyperlink to my text, the default location when
the explorer box first opens is My Documents. Once I drill down to the
path/file I need, the next insert hyperlink doesn't stay with the last
opened location, it starts back up at My Documents. Is there a setting
somewhere I can change this to default to the last opened location? If
I'm working with hundreds of files and setting and/or editing links, it
would be great if I could stay in the right folder instead of having to
drill down every time. I've checked my customize file locations, but
don't see anything there or at least don't know what I'm looking for.
