Hi Jim...
To turn it off completely, go to Tools>Autocorrect Options...in there, click
on the Autocorrect tab and remove the check from the box that says
"Capitalize first word of sentences"
Or, if you just want to deal with it in one document, type your sentence and
as soon as you see Word turn something into a cap, just hit ctrl+Z and that
will undo that particular instance.

I'd like to know how to turn off the auto cap 'feature', would be real
nice if I could do this on a per document basis, but at this point I'll
settle for just plain turning it completely off. I tried several of the
options on the spelling and grammar tab all to no avail.
