Try this, Ray:
Select the text you want highlighted.
Go to Format > Borders and Shading
Click on the Shading tab and click on the color you want (the tab might have
been called "Patterns" in earlier versions of Word. I can't remember)
Then, use the dropdown box in the lower right corner to apply the shading to
the "Text" (or you could choose Paragraph if you did indeed want the whole
paragraph shaded)
If it's something you want to do a lot, you can create a style and apply the
color to that text or paragraph and then it would just be a matter of
selecting that style. OR, you could run the macro recorder while you do it,
then just run the macro from a keyboard shortcut or toolbar button any time
you want to do it.

I would like to include specific background color for selected areas of text
in a Word 2002 document. My first attempt at this is to highlight the text,
but the selection of available highlight colors is quite limited. I looked
at
themes for this, but that appears too cumbersome and inflexible. Is there
anything in Word that is comparable to the formatting options for cells in
Excel?
