I own and have tried them all....PageMaker (the Adobe desktop publishing option) is my least favorite. Generally I use Publisher cuz I don't really do Advanced desktop publishing stuff so I don't need all the bells and whistles offered by Quark and PageMaker...but when I do decide to play around with desktop publishing, I definitely see Quark as being the one that produces the most professional looking stuff....and I know, when I talk to any of the people who do this kind of stuff for Magazines, etc., that they LAUGH at Publisher and they find PageMaker to be shortcoming..they all use Quark...and I also see, in the employment ads, all the design layout type companies request experience with Quark...some also mention PageMaker...but I've NEVER seen one require Publisher knowledge...basically they see Publisher as a joke. Their hesitance to move forward with a native product for OSX made a number of companies start moving over entirly to Adobe offerings.
