Play Safe!.

Dark Blue Background (think red=0, green=0, blue=200 or less)
White Text, at a push "Yellow".

Yes, red is very clear to read on your monitor. But not so when projected 
against a blue background. Unless....it's one
word that occupies the screen in a big bold font size. e.g. PANIC
