You can always change the ReplyTo and Originator addresses for the account in the Account Settings. However, that won't changed the Received From info that will wind up as part of the message delivery history on its way to your recipient. That history is the information that would be used to identify where the mail came from if someone really wanted to chase it back to its origin.
