One thing to check is that your style isn't defined to Automatically
Update. I don't know the menu path in 2007, but in 2000 you click Format
> Style then click Modify. There's an Automatically Update check box,
and that should be cleared in almost all circumstances.
Otherwise, Word attempts to redefine the style to match the manual
changes you've just made. Redefining the style would result in the sort
of global changes you're seeing.
