We use Public Folders on our Exchange Server. The only way I know to see who created a calendar item is to open the item and click on the Schedule tab. The creator of the item should appear first on the list of attendees. It appears that contacts do not record who added them to the contact list. If you look at the permissions of the folder in which they are placed, you can see who has the necessary permission to add contacts, but that could be everybody, and it can be changed by the owner(s). The person who created the folder is almost always the "Owner" permission level. I don't have Exchange Server running here at home, so I can't test this out.
