Or, why not use a VLOOKUP to add the single letter to an adjacent cell, once
they choose the name from the dropdown?

I doubt that a validation list can do this - it really is just a way to
select values for the cell.
You can set up a list control that will show both of them but only store one
in its linked cell, but that cell is separate to where the list itself is.
Why do you need just the single letter?
