OK, a bit more patience and I found the answer myself! DOH!
UDFs ARE indeed affected by the Macro security level....

I've developed a sheet in Excel 2002 over here in the UK with a nice UDF in,
I've sent it to the US and the UDFs don't appear to work (#NAME errors) and
thought that their macro security level could be at fault? Maybe?
