If the TOC style is defined with no shading, it should not appear with
shading, unless (as another poster suggested) you are seeing the result
of a setting in Tools > Options > View > Field Shading.

Your post suggested that the style had shading assigned to it. The
definitions of the TOC styles in your document may be being overwritten
by an attached template IF the Tools > Templates and Add-Ins >
Automatically Update Document Styles check box is checked.

Otherwise, the definitions in the document should remain stable.

Finally, it's possible that formatting applied to the headings
themselves (in the body, not the TOC) may be carried into the TOC. If
that's the case, you should be able to "reset" the TOC to the defined
styles by selecting the TOC and pressing Ctrl + Spacebar, and then Ctrl
+ Q.
