You shouldn't need to sort. Simply insert the entries in the right place in
the first place.
The best way to do this is to take a copy of your existing document and
strip it down to just one entry - complete with headings, page breaks and
styles. Then remove the actual information - leaving just the headings, and
perhaps substituting "xxx" for each place that information would go. Then
save this as a *.DOT template file.
When you have a new entry to insert, open this template and type the new
information into it. Then select the pages and copy/paste them into your
master document at the right place. (No need to save the partial document
you created from the template.)
Another option would be to used merging. Each person would live in his/her
own file. Your master document would have no information of its own -
simply inclusion statements for each of the individual files. (Note that I
haven't used document merging for at least a decade, so I have no idea of
how - and how well - it works in the current versions of Word.) Indexes or
tables of contents should still be able to be produced from the included
files.
