Marvin, I recommend you try your question on one of the groups for the blind, 
such as the one at www.blindprogramming.com
 
I sympathize with your plight, but you are really asking in the wrong forum: 
Microsoft Office does not include Project Management software, and Ofiice is 
the only topic this group covers. 
 
By the way, can't your college spring for an update to JAWS? It's at version 
7.1 right now.

found a link to a guy who is a project manager, and uses jaws.
for my project management course at my college, here, in devonport, tas, 
australia, using jaws 6.1, do not have microsoft project on the machine i am 
using, and one of the questions is to design a gant and cpa chart.
how do i do this, as totally blind, and is there any speech friendly 
software that will do this for you?
