If your doing full Information Store backup, then you
need to restore to a recovery server. then connect to
it with outlook, export the contents and then recreate
the mailbox on the production server and import it
back in.

If your doing brick level backup, then use the method
supplied by your backup software.  Usually just
tagging a mailbox and choosing restore.

Also if your using Exchange 2k I hear it has deleted
mailbox retention but i don't have any experience with
it.

Yes the first option is a pain and there are a million
debates on which method of backup is better, etc.  But
its the main reason that an exchange implementation
shouldn't be done without also planning every instance
of a disaster recovery.  Message, mailbox, and server
recovery.  Dont' get me wrong, although method 1 is a
pain, I often prefer it over brick level backups, as
once your IS gets to a certain size, brick level
backups become fairly unfeasable.
