[msexchange] Diagnostic Logging

Hello,
I'm trying to track why a message is not being delivered to an Exchange
2000 Server.
It fails with an SMTP Connection timed out error.
There are no filters to stop delivery and I'm hoping by turning the
diagnostic logging up to maximum I'd be able to catch some useful
information.
However, I'm not entirely sure which Service/Categories within
diagnostic logging to turn on or indeed if this will give me information
about email COMING IN.
Anyone have ideas or sources of useful information?
