Though the aluminium cookware people keep it quiet, there is a consensus of
opinion (Auntie Fern is one) that indeed the stuff will dissolve in acidic
foods such as tomatoes.  We have disposed of all of our aluminiumumum pots
except for the pressure cooker and it is only used for canning garden
veggies which are in glass jars.  All our cookware is stainless now although
the better pots have a thick aluminiummmm bottom affixed under the stainless
to better spread the heat.  There is some speculation by some doctors that
aluminium in food causes Alzheimers Disease since victims of that disease
show higher concentrations  of it in their brains.  Other researchers say
the aluminium had nothing to do with mental failings, so who knows?  Not I,
that's for sure.
