The scroll wheels will move you through what VoiceOVer is saying.

Not all but some navigation commands can be given such as interacting with control groups.

Microsoft Word and other Office applications are not accessible with VoiceOver at this time. You can however open word documents in TextEdit




What about the  braille table, is it possible to use another one then
the us-table?
If so , where can I find this or on which way can I adapt this?

In theory yes but as of this time there are on other. I have experimented with a Swedish table of my own authorship.
