Here's how to use vo to delete an app from the iphone/touch in version 3.1.

open itunes, go to the sources and choose applications, choose the table of
apps, interact with it and choose an app and vo-shift-space for a context
menu.  delete will be there and the next time you sync, the app will be
gone.
